Autumn Harvest Quinoa Granolna

This homemade fall granola is a staple in my home, offering both convenience and delicious flavors. Every Sunday, I take the time to prepare a fresh batch, knowing that it will fuel me through the upcoming week. It never fails to impress me - whether paired with creamy yogurt and juicy berries for a refreshing start to the day, or simply enjoyed with a splash of milk. There are even moments when I go straight for the container. Such a simple yet fulfilling, this fall granola has truly earned its place as my ultimate go-to choice.

Autumn Harvest Quinoa Granola

Servings: 7 Cups Total time: 50 Minutes


Ingredients

-   3 cups oats                               -   1 cup shredded coconut

-   1 cup cooked quinoa                  -   1/2 cup raw pecans

-   1/2 cup pistachios                    -   1 cup raw pumpkin seeds pepitas

-   1 1/4 cup dried cranberries


-   3 TBSP butter                              -   1 cup pure maple syrup

-   1/2 cup pumpkin puree               -   1/2 tsp nutmeg      

-   1 TBSP  coconut oil or butter     -   2 tsp cinnamon

-   1/2 tsp ginger                           -   1/2 tsp salt

-   2 tsp vanilla extract                     -   4 TBSP honey

Directions

  1. Preheat the oven to 325 degrees F.

  2. In a large bowl combine the dry ingredients and toss well.

  3. In a skillet or small sauce pot melt the butter over medium heat until just browned. The butter begins to brown along the bottom, whisk browned bits off of the bottom of the pan. Once the butter is browned quickly remove from the heat stir in the maple syrup, pumpkin and coconut oil. Add the cinnamon, nutmeg, ginger and salt. Stir in the vanilla.

  4. Pour the warm mixture over the dry mixture and fully combine. I normally stir for a good 3 to 5 minutes.

  5. Spread the granola out onto two parchment lined baking sheets with sides and drizzle with 2 tablespoons of honey. Bake for 30 to 40 minutes stirring every 15 minutes so the granola will get evenly toasted. The last time you stir the granola, drizzle it with the remaining 2 tablespoons of honey.

  6. Remove from the oven and let cool completely before storing in air tight container.
